Master Chocolatier Program in Vancouver

Vancouver - This two day hands-on training program is focused on Mastering the Use of Color on Chocolate for six (6) students with Joanne Mogridge at Cocoa West Chocolatier, Bowen Island, BC. Under Joanne's expert guidance you will use professional air brushes, equipment and techniques to decorate molded and enrobed chocolates with color.

Joanne and husband Carlos, an artist, spent a year developing this program for us - testing a number of different cocoa butters and air brush equipment, perfecting the techniques until they felt prepared to take students through the processes.

NOTES:

Program participants and travel companions must be adults - 17 years of age or older. Also note that the program involves a lot of standing for long periods and walking (with bags at times) so good mobility and strength is important. Because we go into small towns, handicap access is at a minimum.

Cancellation Policy:

Our Maitre Chocolatier Programs and Tours only accommodate a limited number of students and are usually full with a waiting list. As these programs involve a travel component - we need to contact those on the waiting list in enough time to for them to make travel arrangements. We will do everything in our power to find a replacement in order to refund your registration fee minus a $100.00 US administration fee but cannot guarantee that we will be successful. Refunds will not be given after 45 days prior to the program start date. Please make sure that you are committed to the program before paying your registration fee. We also suggest that you take out travel insurance when booking your travel to and from the program in case of an emergency.

This Program is the next step forward for chocolatiers or aspiring chocolatiers who want to advance their skills in decorating chocolate with color.

During the program, students will learn a variety of artistic techniques to incorporate colour into their chocolate making. Techniques range from applying colour into moulds and onto finished chocolates to creating custom transfer sheets and thin colour plaques.

Color Techniques

Airbrushing colour will be a significant part of the course, with students actively practicing linear, textural, and colour blending possibilities of airbrushing. Some basic colour theory will be discussed.

Cocoa Butter Airbrush Technique

The program fee includes a Paasche H airbrush set that you will practice with during the program to develop your skill and mastery of the machine under Joanne's guidance. You then take the airbrush home with you at the end of the program so you can start to work on your products immediately.
