Welcome to our Chocolate Program Overview

The Maître (master) Chocolatier Programs are the next step forward for graduates who want to advance their skills with an experience in using professional equipment and learning techniques for the production of chocolates in larger volumes.

our unique curriculum

These programs are usually one week in duration at selected professional chocolatiers facilities. At Ecole Chocolat we made a decision early on that our hands-on advanced programs would not be taught in an artificial classroom setting but in professional laboratories with actual chocolatiers and chefs as teachers. This has made our opportunities to offer programs each year more limited but the resulting programs are much more beneficial for the students.

In each program, you attend workshops and programs led by professional chocolatiers producing luxury chocolates with the help of professional chocolate making equipment and experience instructor led tours to important chocolatiers' boutiques and factories.

Prerequisite for programs and tours: Ecole Chocolate Professional Chocolatier Certificate of Achievement. If there is still space available after our graduates have registered, we do take registrations from qualified individuals who are not graduates of the Professional Chocolatier Program. Those individuals need to understand that these are advanced curriculums that do not include basic chocolate making skills.

Exploring Cacao and Chocolate Production in Costa Rica
next program will be offered March 8 - 13, 2009

We explore wild and farmed cacao in the Caribbean lowlands of Costa Rica. This week long (six night) adventure will take you to the historical roots of cacao growing during harvest. Come home with a much better understanding of cacao cultivation and processing.

Chocolatier Program in France
next program will be April 25 - 30, 2009

This is an opportunity to learn from the French master chocolatiers. The one-week (6 nights) experience combines a special program of hands on training at Valrhona's Ecole du Grand Chocolat with visits to important chocolate boutiques in Paris.

Chocolatier Program in Vancouver
next program will be May 11 - 15, 2009

One week (5 days) of hands on training for only six (6) students with Joanne Mogridge at Cocoa West Chocolatier, Bowen Island, BC. Under Joanne's expert guidance you learn to use professional equipment/ techniques and understand the business of chocolate.

Chocolatier Program in Tuscany
next program will be Fall 2009

This is an opportunity to learn from the Italian master chocolatiers. The one-week (6 nights) experience starts and ends in Florence while exploring the important chocolatiers in Tuscany.

Chocolatier Program in Belgium
next program will be offered in 2010

This is an opportunity to learn from the Belgian master chocolatiers. The one-week (5 nights) experience combines visits to a chocolatier's boutiques in Brussels with a special program of hands on training at Barry Callebaut Chocolate Academy in Wieze, Belgium.

We keep the enrollment small for these tours in order to give you a very personal learning experience and maximum benefit - as we understand this is a major financial investment for our students.

Registering for the Program

See individual program overviews for registration details. The registration deadline for these programs is usually 3 to 4 months from the start of the program in order to confirm the program attendance enabling students to make their travel arrangements.

Maître Chocolatier Program Assessment:

Students will be assessed by instructor or leader based on the grading parameters for the program or tour.

Maître Chocolatier Program Certificate:

Students completing the program will receive an Ecole Chocolate Maître Chocolatier Certificate of Achievement.
